We hit the first trick cask - while this Glendullan started filling in American Oak, it was already finished in Cognac casks. It’s not a particularly common cask choice in Scotland, and even less so in Diageo’s warehouses – they may have all sorts of casks stashed away in the sun, but they rarely let cognac casks come out.

Glendullan is still uncommon outside of the US, but its usual fragrant and floral character is perfect for refilling casks, and the cognac finish shouldn't overwhelm it.

Nose: Candied fruit, sharp apples and buttered pastry-half-baked pie, dusted with powdered sugar. The jelly - orange and lemon - is infused with spiced pear, lemon drizzle cake, raisins and muscat grapes. Lemon Madeleines, Mixed Fruit Vanilla Cream, and Oatmeal and Raisin Cookies followed.

Palate: Sweet, rich buttery caramel sauce brings sultana-studded fruit sponge cake, polished oak and soft baking spices. Creamy mint, followed by fruit: fresh-baked apple puree, a bit of brown banana, and poached pear. Brown butter toffee cookies and green leaves sneak in at the end.
