The most standard of all the maturations in this year's collection - a classic mix of refilled European and American oak, sherry and bourbon casks. This is definitely a whiskey and they didn't try anything weird and wonderful, just showcasing what the distillery does best.

Nose: crisp apple and crunchy pear, surrounded by green grass and meadow flowers. Mild minty creaminess complements flavors of white grapes, sweet raisins and beeswaxed oak. Flavors of white melon, oak aromas, candy bracelets and stewed apples continue to develop.

Taste: Starts with a thick buttery tart-sharp apple and mint spring. Oak and lemon zest are followed by raisins and sponge cake. Sharp apples complement the candied almonds and frittata. Floral notes abound: honeysuckle and violets.

Finish: Green leaves, mint cream, buttery mint and moist grass.
