The brewing process of Moutai is a unique traditional brewing process. The entire production cycle lasts for one year, with the koji being made during the Dragon Boat Festival and the ingredients being added during the Double Ninth Festival. During the brewing period, it is steamed nine times, fermented eight times, and the wine is extracted seven times. It is divided and stored, blended and stored, and then packaged and shipped out of the factory five years later. The brewing of Moutai has the characteristics of two feedings, solid-state fermentation, high-temperature koji making, high-temperature accumulation, and high-temperature wine picking, thus forming a unique brewing style. Moutai Distillery is a famous distillery in my country. Kweichow Moutai is produced exclusively in Moutai Town, Renhuai City, Guizhou Province, China. It is a model of Daqu Maotai-flavor liquor.
