Mortlach has one main aspect that sets it apart from the rest of Diageo's portfolio: it's all about the sherry casks. The 12-year-old has a hint of American oak, but other bottles in the distillery's range focus on rich, sherry-ripened flavors that pair well with Mortlach's fleshy spirit.

However, this whiskey is the exact opposite, it is stripped and focused on original oak casks and re-barrels. For traditional Mortlach fans, this might come as a bit of a shock, but since my favorite distillery whiskey is the now defunct (probably sold out - not many) 100% Bourbon Cask Mortlach 25 Year Old, I'm curious.

Nose: Brown sugar oatmeal cookies, ginger spice and boiled fruity sweets. Nutty notes emerge with toffee, caramel sauce and a hint of wood smoke. Floral scents waft through, accompanied by digestive biscuits.

Taste: Nutty crunch, lemon compote and vanilla cream with hints of chocolate sauce and raisin jam. Spice builds with some darker oak, brown sugar and custard. Baked apples and pears bring the rear.

Finish: Vanilla cream and applesauce, followed by richness and finish.

Comments: Even with the sherry removed, Mortlach is still a bit of a beast. A fleshy spirit with a hefty body to it, with some well-balanced creamy barrel character.
