Aroma: Ozone in the ocean calms the smoke, the properties of ozone, time brings balance, a perfect blend of oak, smoke and spirits. While the smoke is always visible from the nose, the style is dry, earthy, peaty gray, and as such, the oak can appear with golden caramel, fudge, vanilla custard, ginger, nutmeg and cloves. There are citrus fruits, a splash of water from the glass, mild lemon meringue and citrus. Take a deep breath as floral notes of thyme, heather and sea powder transport you to the shores of the Atlantic Ocean.
Palate : On the palate there is a noticeable refinement and supple texture and style. Again, the balance of aromas is superb as the smoke loosely wraps the sweetness drawn from the depths of the oak. Coconut, vanilla custard, lemon honey mixed with smoked oysters and tanned briny sand.
Finish: The finish is sublime, smoky for sure, also soft sweetness with hints of oak fudge and barley malt, orange, mango and depth of banana toffee pie and quality. There are many layers of interchange on each sip. Aromas of spirits, ripe apples and apricots intertwine with malt and oak sweetness as the smoke draws back and forth, along with a typical Port Charlotte-style dry smoke.
