The heavy peat smoke proved to be an incredible pairing with Sauternes.
The Octomore 12.2 will spend three and a half years in ex-American oak casks, laying a firm foundation for fruity and floral spirits in our lakeside warehouse before refilling in impeccable premium Sauternes casks.
The pivotal role of Sauternes casks will add 18 months of supercharged fruit. Melon, white peach, honeysuckle and coconut add real flavor and sweetness, complementing the peaty smoke of this heavily phenolic malt.
Characteristic - Sauternes casks bring another dimension to the dynamism of the Octomore. Honey-soaked fruit and dry smoke come together beautifully; the classic combination of smoky and sweet fruit is once again perfectly presented.
Aroma - Delicious aromas of melon, honey and smoked almonds. Toasty oak and earthy smoke are blocked by layers of fruit and honey. A combination of orange zest, peaches, ripe melon, lemon and honey all wrapped up in a malty grain sweetness. Dried apple and pear drops follow, along with a wave of peaty smoke and toasted oak, releasing earthy and pine resin aromas.
Palate - Luscious and velvety, with fruit skimming the palate, lemon zest and vanilla pods stand out with melon and orange blossom. Another puff highlights the structure brought by the French oak, with caramel, baking spice and dryness with notes of smoke and malt sweetness. Ripe fruit drizzled in syrup always speaks to the influence of Sauternes casks.
Finish - Finishes with a hint of salty lemon as the fruit and oak fade. That lovely peaty smoke comes through and imprints the Octomore DNA throughout the wine.
