Refined and powerful, Octomore Extra Heavy Peat Series 12.1 is a pure smoke balanced with our lively, vibrant, fruity and floral distillate.
Head Distiller Adam Hannett favors a vibrant version of the Octomore .1 aged for only 5 years in ex-American whiskey casks. Octomore 12.1 is a necessary control for the rest of the series,
As an experiment within an experiment, our baseline should not be underestimated. Continentally grown Scottish barley was distilled in the patient, thought to be a trickle.
A stripped ripening profile allows sensory dialogue to accentuate the grain-rich malt flavors of this barley-forward single malt whiskey.
CHARACTERISTICS - Vibrant, powerful and lively at first, then opening to reveal layers of complexity, infused by slow distillation, careful maturation and cask selection. A drink that rewards those who seek to discover Octomore Whiskey.
Aroma - Opens with fresh citrus and peaty smoke. Vanilla sponge cake and barley sugar for a rich malty sweetness. Coconut and chocolate, vanilla and caramel follow, and layers of cinder toffee and peat smoke and honey emerge as the aroma unfolds further.
Taste - Spicy and sweet in the mouth, with a texture of warm golden syrup. Honey and peat smoke followed by a boil of oak chips and peaty apricot jam. Another bite brings maltose and sweetness of straw, heather and nut nougat. Mineral sand on the palate, leading to dry phenolic earth smoke and notes of orange peel and pear juice.
Aftertaste - The finish brings salted caramel with floral and herbal notes. Honeysuckle, primrose, and then mild peaty smoke, as always, wafts the longest notes.
