Aviation American Gin


Production
Just like the world's finest gins, Aviation is distilled using a proprietary maceration recipe, resulting in a purely botanically flavored blend.

Step 1: Infusion
It all starts with our precise blend of botanicals - Cardamom, Coriander, French Lavender, Fennel Seed, Tribulus, Juniper and two types of Orange Peel. The botanicals are suspended in pure neutral grain alcohol for 18 hours in maceration tanks.


Step 2: Distillation
The steeping liquid is then pumped into the still along with pure water. A steam jacket heats the infusion and the steam enters a condenser which cools the steam to form a gin distillate.


Step 3: Cut
In a carefully monitored process, the first liquid to leave the still, the "head", is removed. The "spiritual hearts" are collected throughout the run, and then the still determines the end of the cycle and makes the final cut, the "tail." This process takes about 7 hours, at which point, the "heart cut" is 142 proofs.


Step 4: Blending and Bottling
The 'heart cut' is transferred to a mixing tank where pure water is added to bring the gin to the desired 84 degrees. It is then sent to the bottling line for filling, capping and labelling.
