Producer: Brunelli - San Pietro in Cariano - Italy.

Grape varieties: Corvina Veronese 65%, Rondinella 25%, Corvinone 10%

Production area: San Pietro in Cariano and Pedemonte di Valpolicella (VR), on soil rich in skeleton and mainly calcareous. Vines with an average age of 35 years.

Vinification: the best selection of Valpolicella is "passed over" on the dried pomace of freshly tapped Amarone, still soaked in sugars and yeasts, thus starting a second fermentation. With this process, the wine is enriched with color, extracts and aromas, increasing the alcohol content and its longevity. After aging for 15 months in oak barriques and tonneaux, a product of notable balance and structure is obtained, which has acquired new aromatic notes and stabilized its coloring substance. It is further refined in the bottle for 6 months before being marketed.

Description: intense ruby red colour, the nose has a bouquet of blackberry jam, ripe fruit, spices and hints of cocoa. In the mouth it is full-bodied and structured, enveloping and balanced, remaining powerful for a long period.

Recommended pairings: versatile wine: thanks to its medium body it is suitable both in the winter months with elaborate first courses, red meats, game, ribs, roasts, duck and medium-aged cheeses, and in the summer months with carpaccio or roast beef.
